INTRODUCTION
In general LAKES or DISPERSE colours are very fine powder, good light fastness properties , resistance to moisture , insoluble of water , alcohols and organic solvents . This helps to increase the shelf life of end products.
Lake Colors are dispersible in vegetable oil, and can be mixed with fats, oils, etc. They can also be dispersed in suspension of propylene glycol or sucrose (water or sugar). Lake colors, being relatively inert absorption compounds, are very adaptable and versatile. Because of their good dispersion properties, an almost infinite variety of products can be colored with these pigments.
PROPERTIES
LIGHT FASTNESS : As food colours are bonded with Aluminium hydrate, the rate of discoloration is reduced in comparison to the parent dye. This facilitates in preventing fading of color in end product.
OPACITY / HIDING STRENGTH: Lake colors are opaque and dispersible. This helps to cover any surface with low quantity of lake colours.
SHADING / TINTING : Lake colors produces different tint with different strength of parent food colors. This shade remain constant on applying any number of coatings. This quality of consistency helps to reproduce same shade from batch to batch.
MIGRATION/ SPOT : As lake colors are insoluble in water, the migration of colors is prevented. This helps to prevent mottling or spots in end product. Such qualities of lake colors have excellent advantage over the parent or primary food colors.
